I love this recipe and I love comfort food. Now I can have the best of both.
Shepherd's Pie - Low Carb Version
2 pounds ground beef
1/2 onion, chopped
seasonings salt, pepper, garlic powder
1 large egg beaten
6 ounces shredded cheddar cheese, divided
16 ounce can of french style green beans
16 ounces cauliflower, cooked
3 TBLS butter
1/4 cup sour cream
Brown ground beef with chopped onion and seasonings. Drain. Add beaten egg and 1/2 the cheddar cheese. Spread on the bottom of a baking dish. Add the green beans that have been buttered and seasoned with salt and pepper. Spread evenly over the ground beef mixture. Place the cooked cauliflower in a food processor with 2 TBLS butter and sour cream. Puree until smooth add salt and pepper. Spread the cauliflower mixture evenly over green beans. Top with the rest of your cheddar cheese and bake in the over at 350 degrees for about 35 minutes or until bubbly.

This recipe turned out really good. I'll make it again. The left overs I cut into square serving sizes and placed in the freezer for a quick meal later.
