Chocolate Chip Zucchini Brownie Recipe

Chocolate chip zucchini brownies recipe from our farm. What do you do when the garden gives a lot of zucchini?

Make chocolate chip zucchini brownies of course with chocolate glaze. I love finding ways to use all the zucchini I get from one plant. You can adjust the recipe however you like. You can add walnuts, use oil instead of applesauce or add an egg for a more cake like consistency. You can cut the salt too if like. I love the extra salt in baked goods. We used to sell our zucchini baked goods and goat milk fudge at the Grove City Farmers Market. Now we just bake at home for us but we love to share recipes with you. 

Here's what you'll need for the brownies:

  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract

In a large bowl combine the above ingredients, applesauce, sugar and vanilla. Here's what you'll need next:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened organic cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoon sea salt 

Mix the dry ingredients above, flour, cocoa powder, baking soda and salt in a bowl. Add the dry ingredients to the sugar applesauce mixture. Stir, stir, stir. Once you get everything mixed together add the remaining ingredients. 

  • 2 cups shredded zucchini (skin and all)
  • 1/2 cup chocolate chips or more if you like a lot 

Fold the zucchini and chocolate chips into the brownie batter you just created. You'll need your oven preheated to 350 degrees and a greased 9"x12" baking pan. Spread the batter evenly into the pan. Bake 25 minutes. Depending on your oven you may need to adjust the baking time. You want the brownies to spring back a little. 

Now for the chocolate glaze:

  • 6 tablespoons unsweetened cocoa powder
  • 3/4 cup butter or margarine 

Heat the butter and cocoa powder together in a saucepan or microwave and stir together and set aside. Here's what you'll need next for the glaze

  • 2 cups of powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Combine the powdered sugar, milk and vanilla until combined then add the cocoa powder butter mixture. If it's too thick you can add more milk. If you prefer a chocolate icing you can add more powdered sugar.
